Each ritual, from the greeting at the front door to the fire-dancing desserts, is how they honor the past and share their vision for how fine dining should remain. El Gaucho was founded in 1996 by Paul Mackay based on his experience working at the original El Gaucho, which set the standard for a fine dining steakhouse from 1953–1985 at 7th and Olive in downtown Seattle.
